Low-Carb Eggplant Pizzas

Eggplant Pizzas – Quick & Easy
- 1 large eggplant, cut into slices
- 1 tbsp olive oil
- 1 cup pizza sauce
- 1 cup mozzarella
- fresh basil
1. Sprinkle the eggplant with salt, let sit on paper towels for 15- 20 minutes and wipe dry.
2. Preheat oven to 190°C. Brush oil onto the eggplant slices, add salt and pepper and bake for 30 minutes.
3. Remove eggplant from oven and top slices with a tablespoon of sauce, sprinkle of cheese and fresh basil. Return to oven and bake for another 5-10 minutes or until cheese is fully melted
